Sausage and Harvest Veggies
What would a collection of pork recipes be without including the sausage? It's really quite a versatile meat when you think of all that it can do. By far the best tasting sausage is one that's been cooked on the grill. From pasta dishes to just a sausage on a bun, the smoke flavor from the grill really enhances the taste.
This recipe not only includes that great smoked sausage flavor, it also gives you an opportunity to enjoy some great, fresh vegetables. Here you can use whatever vegetables that happen to be in season.
Ingredients
- 4 Italian sausage links, hot or mild
- 1/4 cup extra virgin olive oil
- 1/4 cup diced onion
- 1/4 cup Parmesan cheese, shredded
- 1 tablespoon butter
- 1 tablespoon dried basil
- 1 garlic clove, minced
- 1 medium zucchini, sliced
- 1 medium yellow squash, sliced
- grape tomatoes per preference, halved
- 1 package Penne pasta (1 pound)
- A hand full of maple or alder smoking chips (optional)
Directions
- Prepare a gas or charcoal grill for medium direct heat. Add the smoking chips, if desired and wait for them to start smoking. Grill sausages, covered for 5 minutes, turning often.
- Once sausage is cool enough to handle, slice and add to vegetables.
- Grill sausage and vegetables in a vegetable rack or cast iron pan for 15 minutes or until vegetables are crisp-tender, turning halfway through grilling time.
- Saute onions and garlic in butter. Add olive oil and continue to heat.
- Prepare pasta per package instructions.
- Pour onions, garlic, butter and olive oil mixture over pasta. Stir.
- Add sausage and vegetables and sprinkle with shredded Parmesan cheese and basil.
