Grilled Porks Chop with Apple Stuffing

Grilled Pork Chop

You have to admit that pork chops are pretty darn tasty off the grill. Yet add the right meat rub, the right amount of smoke flavor and apple and you have a great pork chop!

There's something great about pork and apple together. They just seem to go hand in hand. That must be the reason that you see a smoking whole hog with an apple in his mouth.

This recipe uses grilled apples diced into the stuffing, apple juice, apple wood and a special meat rub.

I used D-Dog's BBQ Apple Rub for this recipe. Like the apple wood, the apple rub is not mandatory for a great chop, but they sure kicked it up a notch.

Ingredients

  • 4 bone-in pork chops, 1-inch thick
  • 1-1/2 cup apple juice, reserve 1/2 cup
  • 2 tablespoons apple cider vinegar
  • 2 red apples, such as Red Delicious
  • 1 teaspoon kosher salt
  • stuffing, stovetop type or your personal favorite.
  • 1/4 cup extra virgin olive oil
  • meat rub
  • smoking wood chips

Directions

  1. Combine apple juice, vinegar and salt in a bowl and whisk. Pour marinade into a large plastic freezer bag and add the pork chops, press out air and seal. Refrigerate for 4 to 24 hours.
  2. Remove chops from freezer bag and brush with olive oil. Liberally apply the meat rub to both sides of the pork chops. Return to refrigerator for 20 to 30 minutes.
  3. Peel, core and slice the apples, Apply a brushing of olive oil and sprinkle with meat rub.
  4. Prepare a gas or charcoal grill for medium indirect heat. Add the smoking chips and wait for them to start smoking. Add pork chops and close lid. Allow chops to smoke for 10 minutes.
  5. Move chops over hot coals or turn gas fire to high and cook an additional 20 minutes, turning and basting frequently with the reserved apple juice. Do the same with the apples, but cook until tender.
  6. Prepare stuffing mix and add diced apples, reserving some slices for garnish.

Include a few extra apples, they make a wonderful side dish.
